Coconut Yogurt

Two Healthy Anytime Treats!

Coconut yogurt, easy peasy, all you need is a bit of pre-planning time wise. Take 1 can of organic coconut milk, and 1 teaspoon of probiotic and mix together.

While you are preparing the mixture turn the oven on lowest setting. When you are ready to put jar into oven, turn off heat and turn on the oven light. Place your yogurt mixture next to the light and leave there for 24-36 hours, and there you have it. I just made a double batch, it also lasts quite a long while in the fridge.

If it isn’t as thick as you like it you can add in chia seeds and leave a couple of hours. You can also add fruit of your choice. I also add it to curries, or anything that I want to have a creamy texture.

My chocolate fix is Truffles. Very easy, the kids can help. Just made a double batch for Easter. I don’t add in the date sugar as I find it sweet enough for my taste.

  • 1/3 cup pitted dates soaked for a couple of hours (save the water to add to other recipes)
  • 1/3 cup cashews soaked for a couple of hours
  • 3 table spoons of nut butter or tahini
  • ½ cup cacao powder
  • ¼ cup date sugar
  • 1 teaspoon vanilla
  • Ground almonds and cacao powder to coat truffles

Process cashews and dates until you have a crumbled mixture. Add in nut butter, and blend to combine then add in sugar and cacao powder. If the mixture holds together, you are ready to rock and roll! If not, add a teaspoon at a time of the date soak water until you get the required consistency. Use a teaspoon to scoop out some of the mixture and roll into a ball in the palm of your hand, then roll in the ground almond or cacao powder to thoroughly coat them. Store in a cool place.
